Homemade pasta sauce

Homemade are always better and a great satisfaction. I had never thought of doing homemade pasta sauce, until I was in need for it immediately. The pasta sauce turned out so good. Store bought pasta sauces are overloaded with sodium. If you are particular about your sodium levels do try homemade ones....infusing different flavors.

Ingredients:

  • Tomato - 5
  • Onion - 1
  • Bell peppers (green, red, yellow) - 1 cup, chopped
  • Garlic - 5 cloves
  • Olive oil - 2 tbsp
  • Crushed Chilly - 1/4 tsp
  • Red chilly powder - 1 tsp
  • Salt - as per taste
  • Sugar - 1/4 tsp
  • Italian seasoning and basil - 1/4 tsp

Method:

Boil the tomatoes in a sauce pan till the skin loosens. Switch it off. After it cools, remove the skin. Transfer to a blender.
Puree the tomatoes and drain through a strainer and discard the seeds and waste. Chop the onions, garlic and bell peppers finely.
Heat a wok with olive oil and add the italian seasoning and basil.
Add chilly flakes. Before it changes color, add onion and garlic and fry till onions are translucent. Add the bell peppers and fry for 2 minutes.

Transfer the tomato puree to peppers. Add red chilly powder, sugar and salt. Let it boil till raw smell goes and the sauce thickens.

After the sauce cools down, store in an air tight container and refrigerate it.

Note:
  • For color, canned tomatoes can be used. But again canned ones are high in sodium.
  • Add any veggies of your choice like broccoli, carrot.
  • Parmesan cheese can also be added at last.
  • Adjust your spice level.
